These no-bake oat bites are my absolute go-to when I need a quick energy boost or a guilt-free sweet treat. They are incredibly versatile, coming together in one bowl with just a handful of pantry staples like rolled oats, creamy peanut butter, and a touch of honey. I love how they satisfy that mid-afternoon craving without the sugar crash of a store-bought granola bar.

The beauty of this recipe lies in its simplicity—there's no oven required, and you can easily customize them with whatever you have on hand. Whether you swap the chocolate chips for dried cranberries or add a pinch of cinnamon for warmth, these bites are a hit with kids and adults alike. Keep a batch in the fridge, and you'll always have a healthy snack ready to grab on your way out the door.

Ingredients

  • Old-fashioned rolled oats:2 cups
  • Creamy peanut butter:½ cup
  • Honey:⅓ cup
  • Dark chocolate chips:½ cup
  • Ground flaxseed:2 tbsp
  • Vanilla extract:1 tsp
  • Sea salt:¼ tsp

Instructions

  1. In a large mixing bowl, combine the rolled oats, peanut butter, honey, chocolate chips, flaxseed, vanilla extract, and sea salt.

  3. Cover the bowl and place it in the refrigerator for at least 30 minutes. Chilling the mixture makes it much easier to handle and prevents sticking to your hands.

Tips & Notes

  • If the mixture feels too dry to roll into balls, add an extra tablespoon of honey or peanut butter to help it bind together.
  • For a vegan-friendly version, you can substitute the honey with maple syrup or agave nectar.
  • Add a tablespoon of chia seeds or hemp hearts for an extra nutritional boost and a bit of crunch.
