Microwave Eggs

Fast, fluffy scrambled eggs done in the microwave—perfect for busy mornings.

Prep Time:5 minCook Time:3 minTotal Time:8 minServings:1Difficulty:Easy

These microwave scrambled eggs are my go-to when time is tight but I still want something comforting and tender. They come together in minutes with just a whisk, a microwave-safe bowl, and a few simple ingredients—yielding soft curds and a creamy texture that feels much more luxurious than the effort involved.

I love sharing this because it’s forgiving: stir once or twice and finish gently so the eggs stay moist. Add cheese, herbs, or a splash of hot sauce to make it your own. It’s a little morning hug in a bowl that gets you out the door happier.

Directions

  1. 1
Raw eggs and milk being whisked in a white bowl

Crack the eggs into a microwave-safe bowl. Add the milk, a pinch of salt, and a pinch of pepper. Whisk vigorously until fully blended and slightly frothy.

  2. 2
Butter on whisked eggs in a white bowl

Add the butter on top of the egg mixture. Microwave on high for 30 seconds.

  3. 3
Partially cooked scrambled eggs being stirred

Remove and stir vigorously, scraping the bottom and sides to break up any set edges.

  4. 4
Glossy soft scrambled eggs folded with a spoon

Return to the microwave and cook on high for 20 seconds. Stir again; the eggs should be mostly set but still a bit wet.

  5. 5
Softly set scrambled eggs with a spoon

If needed, microwave in additional 10- to 15-second bursts, stirring after each, until eggs are softly set to your liking (they’ll finish cooking from residual heat).

  6. 6
Creamy scrambled eggs with chives and cheese

Fold in the chopped chives and optional cheese, season to taste, and serve immediately with toast or a side of fruit.

Ingredients

  • Large eggs:2 pieces
  • Whole milk:1 tbsp
  • Unsalted butter:1 tsp
  • Kosher salt:1 pinch
  • Freshly ground black pepper:1 pinch
  • Fresh chives, chopped:1 tbsp
  • Optional shredded cheddar or parmesan:2 tbsp

Tips & Notes

  • Use a microwave-safe bowl with room for stirring—eggs expand slightly while cooking.
  • Stirring after each short cook interval prevents rubbery edges and gives creamy curds.
  • If you like richer eggs, swap milk for half-and-half or a small dollop of cream.
  • Add cheese at the end so it melts into the warm eggs without making them greasy.
