These microwave scrambled eggs are my go-to when time is tight but I still want something comforting and tender. They come together in minutes with just a whisk, a microwave-safe bowl, and a few simple ingredients—yielding soft curds and a creamy texture that feels much more luxurious than the effort involved.

I love sharing this because it’s forgiving: stir once or twice and finish gently so the eggs stay moist. Add cheese, herbs, or a splash of hot sauce to make it your own. It’s a little morning hug in a bowl that gets you out the door happier.

Ingredients

  • Large eggs:2 pieces
  • Whole milk:1 tbsp
  • Unsalted butter:1 tsp
  • Kosher salt:1 pinch
  • Freshly ground black pepper:1 pinch
  • Fresh chives, chopped:1 tbsp
  • Optional shredded cheddar or parmesan:2 tbsp

Instructions

  1. Crack the eggs into a microwave-safe bowl. Add the milk, a pinch of salt, and a pinch of pepper. Whisk vigorously until fully blended and slightly frothy.

  2. Add the butter on top of the egg mixture. Microwave on high for 30 seconds.

  3. Remove and stir vigorously, scraping the bottom and sides to break up any set edges.

  4. Return to the microwave and cook on high for 20 seconds. Stir again; the eggs should be mostly set but still a bit wet.

  5. If needed, microwave in additional 10- to 15-second bursts, stirring after each, until eggs are softly set to your liking (they’ll finish cooking from residual heat).

  6. Fold in the chopped chives and optional cheese, season to taste, and serve immediately with toast or a side of fruit.
