Elegant seared salmon with creamy lemon-herb risotto and tender asparagus—perfect romantic lunch for two.
This is my go-to romantic lunch for two: crisp, skin-on salmon paired with a lusciously creamy lemon-herb risotto and tender asparagus. It feels special without being fussy, and the bright lemon and fresh herbs keep the dish light and joyful.
Make it with a chilled glass of white wine and simple plating — the fragrant risotto and golden salmon make an impression every time. The recipe is paced so you can cook together or finish the risotto while the salmon sears for that perfect timing.

Bring the broth to a gentle simmer in a small saucepan; keep warm over low heat.

Heat 1 tbsp butter in a medium saucepan over medium heat. Add the shallot and cook until soft, 2–3 minutes, then add the garlic and cook 30 seconds.

Stir in the arborio rice and toast 1–2 minutes until glossy. Pour in the white wine and stir until absorbed.

Add a ladle of warm broth and stir frequently until mostly absorbed; continue adding broth, one ladle at a time, stirring often, until rice is creamy and tender, about 18 minutes total.

When the risotto is nearly done, stir in 1 tbsp butter, grated Parmesan, lemon zest, 1 tbsp lemon juice, chopped parsley, and salt and pepper to taste. Keep covered and warm.

While the risotto finishes, pat salmon dry and season skin and flesh with salt and pepper. Heat olive oil in a nonstick skillet over medium-high heat until shimmering.

Place salmon skin-side down and press gently for 20 seconds to prevent curling. Cook 4–5 minutes until skin is crisp, flip and cook 2–3 minutes more for medium; remove to rest.

In the same skillet, add asparagus and a splash of water; cover and steam 2–3 minutes until bright and tender-crisp. Finish with a squeeze of lemon.

Plate a generous spoonful of risotto, top with a salmon fillet and arrange asparagus alongside. Garnish with extra parsley, a lemon wedge, and a dusting of Parmesan.

Tips & Notes
- Keep the broth warm — adding cold liquid slows the cooking and makes the risotto gluey.
- Press the salmon down when it first hits the pan so the skin gets fully crisp and flat.
- Taste as you season the risotto; lemon and Parmesan should balance so it’s bright but still creamy.
