These cold noodles are built for days when a hot dinner feels like too much. Buckwheat soba gives the bowl a nutty base, while a thin dressing of miso, lime, ginger, mirin, soy sauce, and a little cayenne coats the noodles without making them heavy.

The vegetables are intentionally flexible. Cucumber, carrot, radish, and scallion keep the bowl crisp and colorful, but thinly sliced daikon, snap peas, bean sprouts, or tender greens work just as well. The important cue is texture: choose vegetables that stay refreshing when served cold.

Start with the smaller amount of miso, then adjust after tasting. Red miso makes a deeper, saltier sauce; white miso is milder and slightly sweeter. The sauce should taste lively and concentrated before it meets the noodles because cold food mutes seasoning.
