Strawberry Lemonade

This strawberry lemonade is my go-to for hot afternoons and backyard gatherings — bright lemon, sun-ripened strawberries, and a touch of honey for gentle sweetness. I love how the honey rounds the tartness without overpowering the fresh fruit; a few torn mint leaves lift the whole drink into something truly refreshing.

It’s simple to make and great for sharing: a quick honey syrup, a blitz of strawberries and lemon, then combine and chill. Make a pitcher ahead for picnics or scale down for a single glass — either way, it’s guaranteed to brighten your day.

Ingredients

  • 1 lb Fresh strawberries, hulled
  • 1 cup Fresh lemon juice
  • 1/2 cup Honey
  • 3 cups Water (divided)
  • 4 cups Ice cubes
  • 12 pieces Fresh mint leaves
  • 6 pieces Lemon slices (for garnish)
  • 1/8 tsp Salt

Instructions

  1. Make a quick honey syrup: combine 1/2 cup honey and 1/2 cup water in a small saucepan and warm over medium heat, stirring, until the honey dissolves. Remove from heat and let cool to room temperature.

  2. Reserve about 1/2 cup of strawberries (thinly sliced) for texture and garnish. Place the remaining strawberries in a blender with the lemon juice, cooled honey syrup, and a pinch of salt; blend until smooth.

  3. In a large pitcher, add the strawberry-lemon puree, the reserved sliced strawberries, and the remaining 2 1/2 cups cold water. Stir to combine and taste, adjusting sweetness or water to your preference.

  4. Add ice and torn mint leaves to the pitcher or individual glasses. Stir gently and garnish with lemon slices and a sprig of mint. Serve chilled.

Tips & Notes

  • For a fizzy version, replace 1 to 2 cups of the cold water with chilled sparkling water just before serving.
  • Use very ripe strawberries for the best natural sweetness; if strawberries are underripe, add a bit more honey to taste.
