A root beer float works because two familiar ingredients create several textures at once. Cold soda stays lively beneath creamy scoops, while the carbonation catches the melting ice cream and rises into a generous foam cap.

Temperature makes the biggest difference. Chill both the root beer and the glasses well before serving, and keep the ice cream firmly frozen so the floats remain cold instead of melting immediately.

Adding a little root beer before the ice cream helps cushion the scoops. Pour the rest slowly down the inside of each glass, pausing when the foam climbs, so you get a tall head without losing soda over the rim.

Serve each float as soon as it is assembled with both a straw and a long spoon. The first sips are fizzy and bright; the final spoonfuls become a rich vanilla-root beer cream.
